Winter is a time of well-deserved rest for the cidermaker, while the cider is slowly fermenting and the trees are slumbering in the orchard? Far from it - we are still keeping very busy during the cool season:
Sales
The best cider in the world won't sell, if nobody knows about its existence. We want to give as many people as possible a chance to sample our ciders and perries; introduce them to the unique flavors of our region; and hopefully get them excited about our style of low intervention, sustainable production. And, yes, we also need to make a bit of money to cover the cost of cidermaking in the next season. However, aspirational cider and perry from Germany is still widely unknown.
Orchards and cider are our passion. Sales and marketing ... not so much. As a micro-cidery, we don't have a dedicated sales team. So we get to wear that hat as well, along with many others. Over time, we've become a bit more at ease doing sales calls, but it still takes a lot of time and energy. Maybe you can help us out? Share a bottle with friends that don't usually drink cider; make a post on social media; bring a bottle to the next pot luck invite. Together, we may finally get the cider revolution in Germany going.
Production
The new vintage is slowly maturing in the fermentation tanks and is not requiring much effort on our part. Occasionally we check fermentation progress or rack off a tank - no big deal. The 2023 vintage on the other hand is now demanding our attention: What's ready for bottling? What needs a bit more maturation time? Which batches would make a good single-varietal and which would do better in a blend? Of course we also have a couple of experiments going on the side. They are a lot of fun but can sometimes cause a few headaches.
What can you expect? One thing is already certain: There will again be single-varietal perries. They are not quite ready for bottling yet, but we are very pleased with how they are progressing so far and can't wait to share them with you. Alongside our popular black currant cider we have a fun new co-ferment that will be ready in time for summer. And of course there will be a new vintage of our flagship products: Spontan, Currant, Cuvée.

Orcharding
We are in the thick of winter pruning. Our recently planted meadow orchard is now in its 6th year. The young trees need to be trained to develop good scaffold branches, strong enough to bear future harvests without breaking; keeping in mind increasing wind speeds and more intense sun rays; and it should look good too, thank you very much.
Mature trees also need regular pruning: old fruit spurs are rejuvenated; overly dense parts of the crown are trimmed to allow sunlight to penetrate to the interior; damaged branches are removed to prevent disease. Pruning encourages even an old tree to continue putting out new growth and high quality fruit.
It's frequently said that a good wine is made in the vineyard. By the same token, a good cider is made in the orchard. No amount of cellar technology can substitute for really good, ripe fruit.

It certainly never gets boring over here. In addition we are planning a special event: On April 5th we'll be going to Berlin for a cider-tasting with the Berlin Cider Club. It's our first time representing 1785 Cider in Berlin and we are looking forward to sharing our creations and meeting new cider friends.
