Tart Cherry Cider 2022

A new coferment! This year we are introducing a tart cherry cider coferment, alongside our popular black currant cider. After all, Schwarzwald and Kirsch belong together.

We first experienced tart cherry coferments when drinking kriek in Belgium, which is lambic beer cofermented with sour Morrellos. Considering that lambic has an acidity and flavor-profile reminiscent of some wild yeast fermented ciders, we gave it a try.

After 2 years and 3 separate fermentations the result is exceptional: the cherry flavor is present without dominating; and there is an edge of herbal bitterness that perfectly complements our low-tannin apples.

Coferments are not always the most approachable ciders. They are complex with bold and often surprising flavors. But when experienced on their own terms, they offer a fascinating and unique drinking experience. Our tart cherry cider is rather reminiscent of an Aperol Spritz, with its fruity flavor and herbal bitterness. Not what you’d expect in a cider from southern Germany, but a really fun aperitif or summer drink.
