Cider Diva 2023

Lallemand Biodiva is a cultured yeast strain of type Torulaspora delbrueckii. It is not as vigorous a fermenter as the ubiquitous Saccharomyces cerevisiae. However, it can impart complex aromas and a softer, fuller body. We complement this by further aging the cider in oak casks for 6 months.
French Oak
This barrique was previously filled with pinot blanc, and you can certainly notice. The resulting cider has a fresh, mineral character with notes of pineapple, balanced acidity and a long finish with a hint of tobacco.
However, the elevated taste comes with a price. You only benefit once from the influence of the previous contents. And quality oak casks are not cheap.
American Oak
This cask has been in rotation for a while and is now fairly neutral. Surprisingly, it continues to produce full-bodied cider with an elegant note of wood.
