It's been a long time in the making, but we are finally ready to release a very special cider: "Forêt Noire"!
Why the french name? Because this cider is a franco-german hybrid, incorporating french apple varieties and production methods into our very regionally focused style.
The origin story is a bit involved (read all about it here); but suffice to say that the result is a wonderful blend of cider and cidre: elegant bitter notes and light residual sweetness of a cidre, balanced with the fresh acidity of german cider apples and the funky flavors of a Schwarzwald wild ferment. Truly a case of the sum being greater than the parts!
Of course this special bottle required a similarly special label. The image is an oil painting that Patrick's grandfather Theoder Müller created in 1980, depicting a group of trees just behind our house here in the Black Forest (meanwhile a lot taller).
This cider is a synthesis of many things. In its production method, it is the result of our experiences and learnings from 5 years of cider-making in the Black Forest. The mix of german and french apple varieties - the latter sourced from another maker in Franken - is emblematic of our desire to network and collaborate with other small makers. The label art is a bit of family history, that turned out to be the perfect choice for this bottle.
All of our ciders and perries are a labor of love. This one a bit more than others.

Hurray! The first club shipment is out the door. Big thanks to our initial group of subscribers. We are super excited about the positive response. We are already hatching ideas for all the cool things we can offer to members in the coming year.
