A coferment of local apples with a generous amount of black currant fruit from our own garden. The berries impart tannins and flavor, and are responsible for the lovely red color.
As usual, the cider is 100% fresh juice from local meadow orchards, unfiltered and unpasteurized.
|Process||Coferment and bottle conditioning|
|Bottle||0,75L champagne bottle|
|Tasting Notes||The distinctive flavor of black currant is very present, both on the nose and palate, without overwhelming the cider. Notes of wild herbs and forest, underpinned by the tannins from the currant skins.|
|Serving suggestion||Pairs well with dishes that would be served with cranberries or black currant compote, such as venison or mushrooms.|
A wonderful base for a mulled cider with christmas spices.
