A new experimental batch – we only made 95 bottles – for which we co-fermented apples and wild plums from the same orchard.
This is definitely not your run of the mill cider: big body, plum on the nose, distinct taste of dried prunes layered with apples and earthy notes – an autumn day in the orchard captured in a bottle.
Definitely allow this one to warm up in the glass to about 10 C to experience the full richness of flavors.
|Process||Fermented to dry and bottle conditioned|
|Bottle||0,75L champagne bottle|
|Tasting Notes||Plum, dried prune, umami, layered over the apples.|
|Serve||Allow it to warm up to about 10C. For food pairings, think of anything that would go well with Chinese plum sauce.|
